Maître d'Hôtel — Cruise Ship (Caribbean itinerary)

We are looking for a maître d'hôtel to run the main dining room across two seatings a night for up to 1,400 guests per sitting, plus the specialty restaurant floor on formal nights. You will manage a floor team of 80-plus waiters and assistant waiters, hold pre-service briefings, and personally handle any guest complaints that a section waiter cannot resolve.

Food Hygiene Level 2 and Crowd Management training are required alongside STCW Basic Safety Training and a current ILO/MLC Medical Certificate. We expect at least six years of dining room service experience with several of them in a supervisory role, and enough Spanish to communicate comfortably with a largely Latin American waiting staff.
